Duck Gumbo Tutorial

This is a simple duck Gumbo recipe I use.
As for the meat, you can use duck breasts or whole ducks. If I were using duck breasts, I would dice them up and cook or boil until meat is done. This time I had some whole ducks. I boiled them in a little turkey stock I canned with a little beef broth so it would take some of the game taste out plus put different flavors in. I removed the ducks from the broth after they were tender. I set them aside to cool. I reserved the broth and added onions, peppers, celery, carrots, and my seasonings. I know, alot of Gumbo has okra in it, but I’ve got one picky eater who want eat it with okra in it. I don’t like okra in it either. So I improvised. I let that cook a bit til the carrots get done. Then I add rice. Bring it to a boil,and boil for 5-6 minutes. Reduce heat to simmer, and let it sit. After the rice is done, I add the meat. Stir around and remove from heat. Let sit for a little bit so everything can incorporate the flavors.

I want so badly to be just like the Proverbs 31 woman. My grandmother did an awesome job of it and Id like to fill her shoes.
