Stormy Night

Well it looks like its going to be a stormy night here in our neck of the woods. Lights are flickering and such. Hope everyone stays safe tonight.

On a lighter night…Dallas was home from school sick today and Daddy has been sick for a few days. They had better get to feeling better cause they have a big duck hunting trip coming up. Daddy is really pitiful when he gets sick. He wants his attention. Bless it.

Last night my home made Enchilada sauce was good in a dish I made from my Pioneer Woman cookbook. I will have to tweek the recipe a little to suit us. I’m not a fan of alot of tomatoes.

Tonight I made her Chicken Tortilla Soup and believe it or not my pickiest eater ate it. Score one. I have another to share that’s quick and easy to whip up. It’s Home made tomato soup using tomato paste on hand when you don’t have a can of store bought tomato soup. photo PhotoGrid_1447777592207_zpswd1dy0e8.jpg Just mix paste water or milk in a small saucepan. Bring to a little boil a d then let simmer about 10-15 minutes. Or mix all together and heat in microwave for 5-6 minutes. Add seasonings. I would add a little extra sugar to set off the acidity in the tomatoes. I have also seen that me and Dallas prefer the water over the milk. It’s pretty good. Serve with a grill cheese and wholah.

I want so badly to be just like the Proverbs 31 woman. My grandmother did an awesome job of it and Id like to fill her shoes.
